Ingredients

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup lemon juice, fresh
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped
  • Cooked rice, for serving


Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through.
  3. Add garlic to the skillet and cook for 30 seconds until fragrant.
  4. Pour in chicken broth and lemon juice, scraping up any browned bits from the bottom of the pan.
  5. Bring to a simmer and then stir in heavy cream and Parmesan cheese.
  6. Let the sauce thicken slightly, about 2-3 minutes.
  7. Stir in parsley.
  8. Serve chicken and sauce over cooked rice.
