Ingredients
- 1 can (15 oz) white beans (Cannellini or Great Northern), drained and rinsed
- ⅔ cup pitted Kalamata olives, drained
- 1 tablespoon Kalamata olive brine
- 1 garlic clove, roughly chopped
- 3 tablespoons olive oil
- 10 twists of freshly ground black pepper
- Pinch of salt (to taste)
- Optional: chopped fresh basil or parsley for garnish
Instructions
- Blend the Base: Add white beans, Kalamata olives, olive brine, garlic, olive oil, black pepper, and salt to a food processor.
- Process Until Smooth: Blend the ingredients until the dip is creamy and well combined, scraping down the sides as needed.
- Adjust to Taste: Taste and add more olive brine, lemon juice, or herbs as needed to balance flavor.
- Serve and Garnish: Transfer to a bowl, drizzle with olive oil, and garnish with fresh herbs if desired.
Notes
Use warm beans for a creamier dip. If it’s too thick, add a splash of water or more olive oil while blending. For a smoky twist, try adding a pinch of smoked paprika or roasted garlic.
