Description

Enjoy this flavorful and healthy High-Protein Chicken Zucchini Lasagna. It is a great way to get your protein and vegetables in one dish.


Ingredients

  • 1.5 lbs ground chicken
  • 2 medium zucchini, sliced
  • 1 (24 ounce) jar marinara sauce
  • 15 ounces ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1 large egg
  • 1 teaspoon garlic powder
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large skillet, brown ground chicken over medium heat. Drain any excess fat.
  3. In a bowl, combine ricotta cheese, Parmesan cheese, basil, egg, garlic powder, salt, and pepper.
  4. Spread a thin layer of marinara sauce in the bottom of a 9×13 inch baking dish.
  5. Layer zucchini slices, chicken, and ricotta mixture. Repeat layers.
  6. Top with remaining marinara sauce.
  7. Cover with foil and bake for 30 minutes.
  8. Remove foil and bake for an additional 15 minutes, or until bubbly and lightly browned.
  9. Let stand for 10 minutes before serving.

Notes

  • You can substitute ground turkey for ground chicken.
  • For a lower-carb option, use more zucchini slices instead of layering too much chicken.
  • Feel free to add other vegetables like spinach or mushrooms.
