Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 oz cream cheese, softened
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1 head cauliflower, riced
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned and cooked through.
- Stir in cream cheese, chicken broth, Parmesan cheese, garlic powder, and onion powder.
- Season with salt and pepper to taste.
- Bring to a simmer and cook until sauce has thickened, about 5-7 minutes.
- Steam or saute cauliflower rice until tender.
- Serve cream cheese chicken over cauliflower rice.
Notes
- You can add vegetables such as broccoli or spinach to the chicken mixture.
- For a spicier dish, add a pinch of red pepper flakes.
