Description

Ingredients

  • 1 lb chicken breast, cubed
  • 1 tbsp olive oil
  • 1 bell pepper, sliced
  • 1 zucchini, sliced
  • 1 red onion, sliced
  • 1 cup broccoli florets
  • 1/2 cup cherry tomatoes, halved
  • 2 cups cooked quinoa
  • Salt and pepper to taste
  • Optional: Avocado slices, sriracha sauce


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and cook until browned and cooked through. Season with salt and pepper.
  3. Add bell pepper, zucchini, and red onion to the skillet. Cook until tender-crisp.
  4. Stir in broccoli florets and cherry tomatoes. Cook for another 3-5 minutes.
  5. Divide cooked quinoa into bowls.
  6. Top with chicken and vegetable mixture.
  7. Add avocado slices and sriracha sauce, if desired.
  8. Serve immediately.
