Ingredients
- 1 lb chicken breast, cubed
- 1 tbsp olive oil
- 1 bell pepper, sliced
- 1 zucchini, sliced
- 1 red onion, sliced
- 1 cup broccoli florets
- 1/2 cup cherry tomatoes, halved
- 2 cups cooked quinoa
- Salt and pepper to taste
- Optional: Avocado slices, sriracha sauce
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and cook until browned and cooked through. Season with salt and pepper.
- Add bell pepper, zucchini, and red onion to the skillet. Cook until tender-crisp.
- Stir in broccoli florets and cherry tomatoes. Cook for another 3-5 minutes.
- Divide cooked quinoa into bowls.
- Top with chicken and vegetable mixture.
- Add avocado slices and sriracha sauce, if desired.
- Serve immediately.
