Ingredients

  • 1 pound chicken breast, cooked and shredded
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (28 ounce) can crushed tomatoes
  • 4 cups chicken broth
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper to taste
  • 8 ounces lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Sauté onion, garlic, and bell pepper in a large pot until softened.
  2. Add crushed tomatoes, chicken broth, tomato sauce, oregano, basil, and red pepper flakes. Season with salt and pepper.
  3. Bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Add lasagna noodles and cook until tender, about 10-12 minutes.
