Ingredients
- 1 pound chicken breast, cooked and shredded
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (28 ounce) can crushed tomatoes
- 4 cups chicken broth
- 1 (15 ounce) can tomato sauce
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon red pepper flakes
- Salt and pepper to taste
- 8 ounces lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1/2 cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Sauté onion, garlic, and bell pepper in a large pot until softened.
- Add crushed tomatoes, chicken broth, tomato sauce, oregano, basil, and red pepper flakes. Season with salt and pepper.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add lasagna noodles and cook until tender, about 10-12 minutes.
- Stir in shredded chicken.
- Serve hot, topped with ricotta cheese, Parmesan cheese, and fresh parsley.
