Description

Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 head cauliflower, riced
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 cup broccoli florets
  • 1/4 cup soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp ginger, grated
  • 1/2 tsp red pepper flakes (optional)
  • Sesame seeds and green onions for garnish


Instructions

  1. Prepare the cauliflower rice.
  2. In a large skillet or wok, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through.
  3. Add onion, garlic, and bell pepper to the skillet. Cook until softened.
  4. Stir in broccoli florets and cauliflower rice.
  5. In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, and red pepper flakes (if using).
  6. Pour sauce over the chicken and vegetables. Cook until sauce has thickened slightly and vegetables are tender.
