Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 head cauliflower, riced
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 cup broccoli florets
- 1/4 cup soy sauce
- 2 tbsp honey
- 1 tbsp rice vinegar
- 1 tsp ginger, grated
- 1/2 tsp red pepper flakes (optional)
- Sesame seeds and green onions for garnish
Instructions
- Prepare the cauliflower rice.
- In a large skillet or wok, heat olive oil over medium-high heat. Add chicken and cook until browned and cooked through.
- Add onion, garlic, and bell pepper to the skillet. Cook until softened.
- Stir in broccoli florets and cauliflower rice.
- In a small bowl, whisk together soy sauce, honey, rice vinegar, ginger, and red pepper flakes (if using).
- Pour sauce over the chicken and vegetables. Cook until sauce has thickened slightly and vegetables are tender.
- Serve immediately, garnished with sesame seeds and green onions.
