Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound lean ground turkey (93%)
  • 2 medium zucchinis, halved and sliced
  • 1/2 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • Salt and pepper, to taste
  • 1/4 cup low-sodium chicken broth or water
  • Fresh parsley or parmesan for garnish (optional)


Instructions

  1. Sauté the Ground Turkey: Heat olive oil in a large skillet over medium heat. Add ground turkey and cook until browned, about 6–8 minutes, breaking it apart as it cooks. Season with salt and pepper.
  2. Add Aromatics: Stir in diced onion and garlic. Cook for 2–3 minutes until fragrant and softened.
  3. Cook Zucchini: Add sliced zucchini to the skillet along with Italian seasoning and red pepper flakes. Stir and cook for 4–5 minutes, until zucchini is tender but not mushy.
  4. Simmer: Pour in chicken broth and let the skillet simmer for 3–4 minutes to meld the flavors and reduce excess moisture.
  5. Garnish and Serve: Remove from heat, garnish with parsley or parmesan if desired, and serve hot.

Notes

For meal prep, let the ground turkey zucchini skillet cool completely before storing in containers. You can also add diced tomatoes or bell peppers for variety. To keep it extra low-carb, skip the broth and simply sauté dry for a crispier texture.
