Ingredients
- 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 1 lb fresh green beans, trimmed
- 1/2 cup crumbled feta cheese
- 3 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and freshly ground black pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss the chicken pieces with 2 tablespoons of olive oil, oregano, salt, and pepper.
- Add the trimmed green beans to the same bowl. Drizzle with the remaining 1 tablespoon of olive oil and season with salt and pepper. Toss to coat evenly.
- Spread the seasoned chicken and green beans in a single layer on a large baking sheet.
- Roast for 20-25 minutes, or until the chicken is cooked through and the green beans are tender-crisp.
- Remove the sheet pan from the oven. Sprinkle the crumbled feta cheese over the chicken and green beans.
- Return to the oven for another 2-3 minutes, just until the feta is slightly softened.
- Serve hot.

- For extra flavor, you can add lemon wedges to the sheet pan before baking and squeeze fresh lemon juice over the finished dish.
- Feel free to add other Mediterranean vegetables like bell peppers or red onion, cut into similar-sized pieces.
