Description

A simple and flavorful Greek chicken dinner cooked on a single sheet pan, featuring tender chicken, crisp green beans, and salty feta cheese. This recipe is perfect for a quick weeknight meal with minimal cleanup.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1 lb fresh green beans, trimmed
  • 1/2 cup crumbled feta cheese
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • Salt and freshly ground black pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss the chicken pieces with 2 tablespoons of olive oil, oregano, salt, and pepper.
  3. Add the trimmed green beans to the same bowl. Drizzle with the remaining 1 tablespoon of olive oil and season with salt and pepper. Toss to coat evenly.
  4. Spread the seasoned chicken and green beans in a single layer on a large baking sheet.
  5. Roast for 20-25 minutes, or until the chicken is cooked through and the green beans are tender-crisp.
  6. Remove the sheet pan from the oven. Sprinkle the crumbled feta cheese over the chicken and green beans.
  7. Return to the oven for another 2-3 minutes, just until the feta is slightly softened.
  8. Serve hot.

  • For extra flavor, you can add lemon wedges to the sheet pan before baking and squeeze fresh lemon juice over the finished dish.
