Ingredients
- 1.5 lbs boneless, skinless chicken breasts, cut into 1-inch pieces
- 2 medium zucchini, sliced
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon dried Italian herbs
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- In a large oven-safe skillet, heat olive oil over medium-high heat.
- Add chicken and cook until browned on all sides.
- Add onion and garlic to the skillet and cook until softened, about 5 minutes.
- Stir in zucchini, chicken broth, heavy cream, Italian herbs, salt, and pepper.
- Bring to a simmer, then remove from heat.
- Sprinkle Parmesan cheese over the top.
- Bake in the preheated oven for 20-25 minutes, or until chicken is cooked through and zucchini is tender.
- Let stand for 5 minutes before serving.
