Description
A rich and creamy Tuscan salmon dish with sun-dried tomatoes, spinach, and garlic, all cooked in one pan for an easy and delicious meal.
Ingredients
- 1.5 lbs salmon fillets
- 1 tbsp olive oil
- 1 tbsp butter
- 3 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, chopped
- 2 cups fresh spinach
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the salmon fillets dry and season with salt and pepper.
- Heat olive oil and butter in an oven-safe skillet over medium-high heat.
- Sear salmon, skin-side down, for 2-3 minutes until golden. Flip and sear the other side for 1 minute. Remove salmon from the skillet and set aside.
- Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
- Stir in the chopped sun-dried tomatoes and cook for 1 minute.
- Add the spinach and cook until wilted, about 2 minutes.
- Pour in the heavy cream and bring to a simmer.
- Stir in the Parmesan cheese until melted and the sauce thickens slightly. Season with salt and pepper.
- Return the salmon fillets to the skillet, nestling them into the sauce.
- Bake in the preheated oven for 10-12 minutes, or until the salmon is cooked through and flakes easily.
- Serve immediately.

- For a healthier option, you can use half-and-half instead of heavy cream.
- Adjust the amount of garlic and sun-dried tomatoes to your preference.
- Serve with crusty bread to soak up the sauce.
