Description

A rich and creamy Tuscan salmon dish with sun-dried tomatoes, spinach, and garlic, all cooked in one pan for an easy and delicious meal.


Ingredients

  • 1.5 lbs salmon fillets
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the salmon fillets dry and season with salt and pepper.
  3. Heat olive oil and butter in an oven-safe skillet over medium-high heat.
  4. Sear salmon, skin-side down, for 2-3 minutes until golden. Flip and sear the other side for 1 minute. Remove salmon from the skillet and set aside.
  5. Add minced garlic to the skillet and sauté for 30 seconds until fragrant.
  6. Stir in the chopped sun-dried tomatoes and cook for 1 minute.
  7. Add the spinach and cook until wilted, about 2 minutes.
  8. Pour in the heavy cream and bring to a simmer.
  9. Stir in the Parmesan cheese until melted and the sauce thickens slightly. Season with salt and pepper.
  10. Return the salmon fillets to the skillet, nestling them into the sauce.
  11. Bake in the preheated oven for 10-12 minutes, or until the salmon is cooked through and flakes easily.
  12. Serve immediately.

  • For a healthier option, you can use half-and-half instead of heavy cream.
  • Adjust the amount of garlic and sun-dried tomatoes to your preference.
  • Serve with crusty bread to soak up the sauce.
