Description

Enjoy restaurant-quality Creamy Tuscan Chicken Orzo in just 20 minutes. This one-pot recipe is a quick and comforting meal.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup chopped fresh spinach
  • 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped


Instructions

  1. Season chicken with salt, pepper, garlic powder, and red pepper flakes (if using).
  2. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes.
  3. Add orzo and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until orzo is cooked and most of the liquid is absorbed.
  4. Stir in heavy cream, Parmesan cheese, spinach, and sun-dried tomatoes. Cook until spinach is wilted and cheese is melted, about 2-3 minutes.
  5. Serve immediately.

Notes

  • Adjust the amount of red pepper flakes to your liking for desired spice level.
  • For a thicker sauce, simmer for a few extra minutes after adding the cream and cheese.
  • Garnish with extra Parmesan cheese and fresh basil, if desired.
