Description

Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1/4 teaspoon red pepper flakes (optional)
- 1 cup orzo pasta
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 cup chopped fresh spinach
- 1/2 cup sun-dried tomatoes, oil-packed, drained and chopped
Instructions
- Season chicken with salt, pepper, garlic powder, and red pepper flakes (if using).
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes.
- Add orzo and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until orzo is cooked and most of the liquid is absorbed.
- Stir in heavy cream, Parmesan cheese, spinach, and sun-dried tomatoes. Cook until spinach is wilted and cheese is melted, about 2-3 minutes.
- Serve immediately.
Notes
- Adjust the amount of red pepper flakes to your liking for desired spice level.
- For a thicker sauce, simmer for a few extra minutes after adding the cream and cheese.
- Garnish with extra Parmesan cheese and fresh basil, if desired.
