Description

Enjoy a simple and flavorful Creamy Tomato Garlic Pasta made in one pot.


Ingredients

  • 1 pound pasta (penne, rotini, or your choice)
  • 1 (28 ounce) can crushed tomatoes
  • 4 cloves garlic, minced
  • 1 onion, chopped
  • 1/4 cup olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 4 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and garlic and cook until softened, about 5 minutes.
  2. Stir in crushed tomatoes, oregano, and red pepper flakes (if using). Season with salt and pepper.
  3. Add pasta and vegetable broth to the pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until pasta is cooked through and liquid is absorbed.
  4. Stir in heavy cream and Parmesan cheese. Cook for another 2-3 minutes, until sauce is creamy and cheese is melted.
  5. Garnish with fresh basil before serving.
