Description
A quick and easy one-pot chicken dish with spinach and mushrooms in a creamy sauce. Perfect for a weeknight dinner.
Ingredients
- 1 tbsp olive oil
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 5 oz fresh spinach
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet or pot over medium-high heat.
- Add chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5 minutes.
- Add garlic and mushrooms, cook until mushrooms are tender and browned, about 5-7 minutes.
- Stir in spinach and cook until wilted, about 2 minutes.
- Pour in heavy cream and chicken broth. Bring to a simmer.
- Stir in Parmesan cheese.
- Return chicken to the skillet. Cook until heated through and sauce has thickened, about 5 minutes.
- Season with salt and pepper to taste.
- Serve hot.
Notes
- For a healthier option, use half-and-half instead of heavy cream.
- Add cooked pasta or rice to make it a complete meal.
- Garnish with fresh parsley if desired.
