Description

A quick and easy one-pot chicken dish with spinach and mushrooms in a creamy sauce. Perfect for a weeknight dinner.


Ingredients

  • 1 tbsp olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 5 oz fresh spinach
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large skillet or pot over medium-high heat.
  2. Add chicken pieces and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5 minutes.
  4. Add garlic and mushrooms, cook until mushrooms are tender and browned, about 5-7 minutes.
  5. Stir in spinach and cook until wilted, about 2 minutes.
  6. Pour in heavy cream and chicken broth. Bring to a simmer.
  7. Stir in Parmesan cheese.
  8. Return chicken to the skillet. Cook until heated through and sauce has thickened, about 5 minutes.
  9. Season with salt and pepper to taste.
  10. Serve hot.

Notes

  • For a healthier option, use half-and-half instead of heavy cream.
  • Add cooked pasta or rice to make it a complete meal.
  • Garnish with fresh parsley if desired.
