Description

A quick and easy one-pot meal featuring creamy orzo pasta with savory mushrooms and fresh spinach, all coated in a rich Parmesan cheese sauce. This dish is perfect for busy weeknights and is a satisfying comfort food option.


Ingredients

  • 1 tablespoon olive oil
  • 8 ounces cremini mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 2.5 cups vegetable broth
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large skillet or pot over medium heat. Add mushrooms and cook until browned, about 5-7 minutes.
  2. Add minced garlic and cook for 1 minute until fragrant.
  3. Stir in the orzo pasta and toast for 1-2 minutes.
  4. Pour in the vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes, or until the orzo is al dente and most of the liquid is absorbed.
  5. Stir in the heavy cream and grated Parmesan cheese until the sauce is creamy.
  6. Add the fresh spinach and stir until wilted, about 1-2 minutes.
  7. Season with salt and black pepper to taste.
  8. Serve hot.

  • For a richer flavor, use chicken broth instead of vegetable broth.
