Ingredients
- 1 tablespoon olive oil
- 8 ounces cremini mushrooms, sliced
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 2.5 cups vegetable broth
- 1/2 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cups fresh spinach
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet or pot over medium heat. Add mushrooms and cook until browned, about 5-7 minutes.
- Add minced garlic and cook for 1 minute until fragrant.
- Stir in the orzo pasta and toast for 1-2 minutes.
- Pour in the vegetable broth. Bring to a boil, then reduce heat, cover, and simmer for 10-12 minutes, or until the orzo is al dente and most of the liquid is absorbed.
- Stir in the heavy cream and grated Parmesan cheese until the sauce is creamy.
- Add the fresh spinach and stir until wilted, about 1-2 minutes.
- Season with salt and black pepper to taste.
- Serve hot.
