Description

Creamy Mushroom Parmesan Chicken is a simple yet flavorful dish. It is perfect for a weeknight dinner.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 8 ounces sliced mushrooms
  • 2 cloves garlic, minced
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste


Instructions

  1. Season chicken breasts with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add chicken and cook until golden brown and cooked through, about 5-7 minutes per side. Remove chicken from skillet and set aside.
  4. Add mushrooms and garlic to the skillet. Cook until mushrooms are softened and browned, about 5-7 minutes.
  5. Pour in chicken broth and bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  6. Stir in heavy cream and Parmesan cheese. Cook until sauce has thickened slightly, about 2-3 minutes.
  7. Return chicken to the skillet and spoon sauce over the top.
  8. Garnish with fresh parsley and serve immediately.
