Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 8 ounces pasta (fettuccine, linguine, or penne)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Juice of 1 lemon
- Salt and black pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook the chicken: Heat olive oil in a large skillet over medium-high heat. Add chicken pieces, season with salt and pepper, and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Cook the pasta: Add pasta to the same skillet. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for about 10-12 minutes, or until pasta is al dente.
- Make the sauce: Stir in minced garlic and cook for 1 minute until fragrant.
- Add cream and cheese: Pour in heavy cream and stir in Parmesan cheese. Cook, stirring, until the sauce thickens.
- Combine: Return the cooked chicken to the skillet. Stir in lemon juice. Season with salt and pepper to taste.
- Serve: Garnish with fresh parsley and serve immediately.

- For a healthier option, use whole wheat pasta and low-fat milk or half-and-half instead of heavy cream.
