Description

A quick and easy one-pot creamy garlic shrimp orzo recipe perfect for weeknight dinners. This dish combines tender shrimp and orzo pasta in a rich, garlicky sauce.

Ingredients

  • 1 tablespoon olive oil
  • 1 pound large shrimp, peeled and deveined
  • 4 cloves garlic, minced
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  2. Add minced garlic to the same skillet and cook until fragrant, about 30 seconds.
  3. Stir in the orzo pasta and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed.
  4. Stir in the heavy cream and Parmesan cheese. Cook for 2-3 minutes, stirring constantly, until the sauce thickens.
  5. Return the cooked shrimp to the skillet. Stir to combine and heat through.
  6. Season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.

Notes

  • For a spicier dish, add red pepper flakes with the garlic.
  • You can substitute half-and-half for heavy cream for a lighter sauce.
  • Other vegetables like spinach or peas can be added with the broth.
