A quick and easy one-pot creamy garlic shrimp orzo recipe perfect for weeknight dinners. This dish combines tender shrimp and orzo pasta in a rich, garlicky sauce.
Ingredients
- 1 tablespoon olive oil
- 1 pound large shrimp, peeled and deveined
- 4 cloves garlic, minced
- 1 cup orzo pasta
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Add minced garlic to the same skillet and cook until fragrant, about 30 seconds.
- Stir in the orzo pasta and chicken broth. Bring to a boil, then reduce heat to low, cover, and simmer for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed.
- Stir in the heavy cream and Parmesan cheese. Cook for 2-3 minutes, stirring constantly, until the sauce thickens.
- Return the cooked shrimp to the skillet. Stir to combine and heat through.
- Season with salt and pepper to taste.
- Garnish with fresh parsley before serving.
Notes
- For a spicier dish, add red pepper flakes with the garlic.
- You can substitute half-and-half for heavy cream for a lighter sauce.
- Other vegetables like spinach or peas can be added with the broth.
