Description

A quick and easy creamy garlic parmesan chicken pasta dish that’s perfect for a family dinner.


Ingredients

  • 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
  • 8 oz pasta (like fettuccine or penne)
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chicken broth
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta cooks, season chicken pieces with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  4. Add minced garlic to the same skillet and cook for about 1 minute until fragrant.
  5. Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
  6. Stir in heavy cream and bring to a simmer.
  7. Reduce heat to low and stir in grated Parmesan cheese until melted and the sauce is smooth.
  8. Return cooked chicken to the skillet. Add cooked pasta and toss to coat everything in the sauce.
  9. Season with additional salt and pepper if needed.
  10. Garnish with fresh parsley before serving.
