Description
A quick and easy creamy garlic parmesan chicken pasta dish that’s perfect for a family dinner.
Ingredients
- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces
- 8 oz pasta (like fettuccine or penne)
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chicken broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Cook pasta according to package directions. Drain and set aside.
- While pasta cooks, season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add minced garlic to the same skillet and cook for about 1 minute until fragrant.
- Pour in chicken broth and scrape up any browned bits from the bottom of the skillet.
- Stir in heavy cream and bring to a simmer.
- Reduce heat to low and stir in grated Parmesan cheese until melted and the sauce is smooth.
- Return cooked chicken to the skillet. Add cooked pasta and toss to coat everything in the sauce.
- Season with additional salt and pepper if needed.
- Garnish with fresh parsley before serving.
Notes
- For a thicker sauce, simmer for a few extra minutes.
- Add vegetables like spinach or broccoli for extra nutrition.
- Use chicken breast instead of thighs if preferred.
