Description

Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1/4 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 4 cups cooked rice
  • 1 cup chopped broccoli
  • 1/2 cup cherry tomatoes, halved


Instructions

  1. Preheat grill to medium-high heat.
  2. In a bowl, toss shrimp with 1 tbsp olive oil, salt, and pepper.
  3. Grill shrimp for 2-3 minutes per side, or until pink and cooked through.
  4. While shrimp is grilling, heat remaining 1 tbsp olive oil in a skillet over medium heat. Add garlic and cook for 1 minute, or until fragrant.
  5. Stir in heavy cream, Parmesan cheese, and lemon juice. Bring to a simmer and cook for 2-3 minutes, or until sauce has thickened slightly.
  6. Season with salt and pepper to taste.
  7. Divide rice among 4 bowls. Top with grilled shrimp, broccoli, and cherry tomatoes.
  8. Drizzle with creamy garlic sauce and serve immediately.
