Ingredients
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1 tbsp lemon juice
- Salt and pepper to taste
- 4 cups cooked rice
- 1 cup chopped broccoli
- 1/2 cup cherry tomatoes, halved
Instructions
- Preheat grill to medium-high heat.
- In a bowl, toss shrimp with 1 tbsp olive oil, salt, and pepper.
- Grill shrimp for 2-3 minutes per side, or until pink and cooked through.
- While shrimp is grilling, heat remaining 1 tbsp olive oil in a skillet over medium heat. Add garlic and cook for 1 minute, or until fragrant.
- Stir in heavy cream, Parmesan cheese, and lemon juice. Bring to a simmer and cook for 2-3 minutes, or until sauce has thickened slightly.
- Season with salt and pepper to taste.
- Divide rice among 4 bowls. Top with grilled shrimp, broccoli, and cherry tomatoes.
- Drizzle with creamy garlic sauce and serve immediately.
