Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can corn, drained
  • 1 (10 ounce) can diced tomatoes and green chiles
  • 4 cups beef broth
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Shredded cheddar cheese, for topping
  • Sour cream, for topping
  • Chopped green onions, for topping


Instructions

  1. Brown ground beef in a large pot over medium-high heat. Drain any excess grease.
  2. Add onion and bell pepper to the pot and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more.
  3. Stir in kidney beans, black beans, corn, diced tomatoes and green chiles, beef broth, chili powder, cumin, and cayenne pepper (if using).
  4. Bring to a boil, then reduce heat and simmer for 15 minutes, stirring occasionally.
  5. Stir in heavy cream and heat through. Do not boil.
  6. Season with salt and pepper to taste.
  7. Serve hot, topped with shredded cheddar cheese, sour cream, and chopped green onions.

Notes

  • Adjust the amount of cayenne pepper to your preference for spiciness.
  • For a thicker soup, mash some of the beans before adding the heavy cream.
  • You can substitute ground turkey or chicken for ground beef.
