Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 (15 ounce) can kidney beans, drained and rinsed
- 1 (15 ounce) can black beans, drained and rinsed
- 1 (15 ounce) can corn, drained
- 1 (10 ounce) can diced tomatoes and green chiles
- 4 cups beef broth
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/4 teaspoon cayenne pepper (optional)
- 1 cup heavy cream
- Salt and pepper to taste
- Shredded cheddar cheese, for topping
- Sour cream, for topping
- Chopped green onions, for topping
Instructions
- Brown ground beef in a large pot over medium-high heat. Drain any excess grease.
- Add onion and bell pepper to the pot and cook until softened, about 5 minutes. Stir in garlic and cook for 1 minute more.
- Stir in kidney beans, black beans, corn, diced tomatoes and green chiles, beef broth, chili powder, cumin, and cayenne pepper (if using).
- Bring to a boil, then reduce heat and simmer for 15 minutes, stirring occasionally.
- Stir in heavy cream and heat through. Do not boil.
- Season with salt and pepper to taste.
- Serve hot, topped with shredded cheddar cheese, sour cream, and chopped green onions.
Notes
- Adjust the amount of cayenne pepper to your preference for spiciness.
- For a thicker soup, mash some of the beans before adding the heavy cream.
- You can substitute ground turkey or chicken for ground beef.
