Ingredients
- 1 lb chicken breast, cubed
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can (14.5 oz) diced tomatoes, undrained
- 2 chipotle peppers in adobo sauce, minced
- 1 cup chicken broth
- 8 oz pasta (penne or rotini)
- 1/2 cup Greek yogurt
- 1/4 cup chopped cilantro
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Season with salt and pepper.
- Add onion and bell pepper to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
- Stir in diced tomatoes, chipotle peppers, and chicken broth. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Stir in cooked pasta and Greek yogurt. Heat through.
- Stir in cilantro.
- Serve immediately or store in meal prep containers.
