Ingredients

  • 1 lb chicken breast, cubed
  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 chipotle peppers in adobo sauce, minced
  • 1 cup chicken broth
  • 8 oz pasta (penne or rotini)
  • 1/2 cup Greek yogurt
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned and cooked through. Season with salt and pepper.
  3. Add onion and bell pepper to the skillet and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more.
  4. Stir in diced tomatoes, chipotle peppers, and chicken broth. Bring to a simmer and cook for 10 minutes, stirring occasionally.
  5. Stir in cooked pasta and Greek yogurt. Heat through.
  6. Stir in cilantro.
