Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 teaspoon Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 (19-ounce) package refrigerated cheese tortellini
- 1 (10-ounce) can diced tomatoes and green chiles, undrained
- 1 (8-ounce) package cream cheese, softened
- 1/2 cup milk
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh basil, for garnish
Instructions
- In a large skillet, heat olive oil over medium-high heat.
- Add chicken and cook until browned and cooked through. Season with Italian seasoning, garlic powder, salt, and pepper.
- Stir in tortellini, diced tomatoes and green chiles, cream cheese, and milk.
- Bring to a simmer, then reduce heat and cook until tortellini is tender and cream cheese is melted, stirring occasionally, about 5-7 minutes.
- Stir in Parmesan cheese.
- Garnish with fresh basil before serving.
Notes
- You can substitute chicken thighs for chicken breasts.
- Add your favorite vegetables, such as spinach or bell peppers.
