Description

Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste


Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
  3. Add onion and garlic to the skillet and cook until softened.
  4. Stir in orzo pasta and chicken broth. Bring to a boil, then reduce heat and simmer until orzo is cooked and broth is absorbed.
  5. Stir in heavy cream, Parmesan cheese, and parsley.
  6. Add chicken back to the skillet and heat through.
  7. Serve immediately.
