Enjoy a quick and easy Creamy Chicken Orzo Skillet. It is perfect for a weeknight dinner.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Season chicken with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add onion and garlic to the skillet and cook until softened.
- Stir in orzo pasta and chicken broth. Bring to a boil, then reduce heat and simmer until orzo is cooked and broth is absorbed.
- Stir in heavy cream, Parmesan cheese, and parsley.
- Add chicken back to the skillet and heat through.
- Serve immediately.
Notes
- You can substitute chicken thighs for chicken breasts.
- Add vegetables like spinach or sun-dried tomatoes.
- Use vegetable broth instead of chicken broth.
