Description

A quick and easy creamy chicken orzo recipe perfect for a healthy and delicious 30-minute dinner.


Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned and cooked through. Season with salt and pepper. Remove chicken from pot and set aside.
  2. Add onion and garlic to the pot and cook until softened, about 3-5 minutes.
  3. Stir in orzo pasta and chicken broth. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until orzo is cooked through and liquid is absorbed.
  4. Stir in heavy cream, Parmesan cheese, and parsley. Season with salt and pepper to taste.
  5. Add the cooked chicken back to the pot and stir to combine.
  6. Serve immediately.

  • For a lighter version, use half-and-half instead of heavy cream.
