A quick and easy creamy chicken orzo recipe perfect for a healthy and delicious 30-minute dinner.
Ingredients
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 4 cups chicken broth
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned and cooked through. Season with salt and pepper. Remove chicken from pot and set aside.
- Add onion and garlic to the pot and cook until softened, about 3-5 minutes.
- Stir in orzo pasta and chicken broth. Bring to a boil, then reduce heat and simmer for 10-12 minutes, or until orzo is cooked through and liquid is absorbed.
- Stir in heavy cream, Parmesan cheese, and parsley. Season with salt and pepper to taste.
- Add the cooked chicken back to the pot and stir to combine.
- Serve immediately.
Notes
- For a lighter version, use half-and-half instead of heavy cream.
- Add vegetables such as spinach, mushrooms, or sun-dried tomatoes for extra flavor and nutrients.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
