Ingredients
- 1 pound pasta
- 1 pound boneless, skinless chicken breasts, cubed
- 8 ounces sliced mushrooms
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
Instructions
- Cook pasta according to package directions.
- While pasta cooks, heat olive oil in a large skillet over medium heat.
- Add chicken and cook until browned and cooked through. Season with salt and pepper.
- Add mushrooms and garlic to the skillet. Cook until mushrooms are softened.
- Stir in heavy cream and Parmesan cheese. Bring to a simmer and cook until sauce has thickened slightly.
- Drain pasta and add it to the skillet with the sauce. Toss to coat.
- Serve immediately, garnished with fresh parsley.
