Description

A simple and delicious one-pot pasta dish featuring tender chicken and fresh broccoli in a creamy sauce. It’s a perfect quick meal for busy weeknights.

Ingredients

  • 1 pound pasta
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 head broccoli, cut into florets
  • 2 cloves garlic, minced
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat.
  2. Add chicken and cook until browned on all sides. Season with salt and pepper.
  3. Add minced garlic and cook for 30 seconds until fragrant.
  4. Pour in chicken broth and bring to a boil.
  5. Stir in pasta and broccoli florets.
  6. Cover and cook according to pasta package directions, stirring occasionally, until pasta is al dente and broccoli is tender.
  7. Reduce heat to low. Stir in heavy cream and Parmesan cheese until the sauce is creamy and heated through.
  8. Season with additional salt and pepper if needed.
  9. Serve immediately.

Notes

  • For a lighter sauce, you can use half-and-half instead of heavy cream.
  • Add a pinch of red pepper flakes for a little heat.
  • You can substitute other vegetables like peas or spinach.
