Description

Ingredients

  • 1 pound pasta (such as fettuccine or penne)
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 tablespoons Cajun seasoning
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Season with salt and pepper. Remove chicken from skillet and set aside.
  3. Add onion and bell peppers to the skillet and cook until softened, about 5-7 minutes. Add garlic and Cajun seasoning and cook for 1 minute more.
  4. Pour in heavy cream and chicken broth. Bring to a simmer and cook until sauce has thickened slightly, about 5 minutes.
  5. Stir in Parmesan cheese until melted and smooth.
  6. Add cooked pasta and chicken to the sauce. Toss to coat.
  7. Garnish with fresh parsley and serve immediately.
