Ingredients
- 1 pound pasta (such as fettuccine or penne)
- 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 2 tablespoons Cajun seasoning
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and set aside.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Season with salt and pepper. Remove chicken from skillet and set aside.
- Add onion and bell peppers to the skillet and cook until softened, about 5-7 minutes. Add garlic and Cajun seasoning and cook for 1 minute more.
- Pour in heavy cream and chicken broth. Bring to a simmer and cook until sauce has thickened slightly, about 5 minutes.
- Stir in Parmesan cheese until melted and smooth.
- Add cooked pasta and chicken to the sauce. Toss to coat.
- Garnish with fresh parsley and serve immediately.
