Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 clove garlic, minced
- 1/2 cup chicken broth
- 4 oz cream cheese, softened
- 1/4 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper. Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes.
- Add garlic and cook for 30 seconds until fragrant.
- Pour in chicken broth and bring to a simmer.
- Stir in cream cheese and Parmesan cheese until melted and smooth.
- Simmer for 2-3 minutes, or until sauce has thickened slightly.
- Stir in parsley. Serve immediately.
