Description

This Select Cottage Cheese Ice Cream is a creamy, no-churn frozen dessert you can blend in minutes, then freeze until scoopable. With a short ingredient list and customizable mix-ins, it’s perfect for busy weeknights, post-workout treats, or a family-friendly dessert.


Ingredients

  • 2 cups (450–500g) cottage cheese (full-fat or low-fat), chilled or pre-frozen in cubes
  • 23 tbsp honey, maple syrup, or sugar-free sweetener, to taste
  • 1 tsp pure vanilla extract
  • Pinch of fine sea salt
  • Optional mix-ins (choose 1–2): 1/2 cup berries, 1–2 tbsp cocoa powder, 2 tbsp peanut or almond butter, 2 tbsp dark chocolate chips, 2 tbsp chopped nuts
  • Optional toppings: fresh fruit, shaved chocolate, crushed nuts, cinnamon


Instructions

  1. Prep the Base: Add cottage cheese, sweetener, vanilla, and a small pinch of salt to a high-speed blender or food processor.
  2. Blend Until Silky: Process on high for 60–90 seconds, scraping the sides as needed, until completely smooth and velvety.
  3. Taste & Adjust: Check sweetness and flavor; add a little more sweetener or vanilla if desired.
  4. Fold in Extras: Pulse in your chosen mix-ins (berries, cocoa, nut butter, chocolate chips) just until combined.
  5. Freeze: Transfer to a freezer-safe container, smooth the top, and cover tightly. Freeze for 2–3 hours, or until firm enough to scoop.
  6. Serve: Let the container rest at room temperature for 5–10 minutes, then scoop. Add toppings and enjoy.
  7. Store: Keep covered in the freezer for up to 1 week for best texture.

Notes

For the smoothest texture, blend thoroughly to break down curds completely. If the mixture is too thick to blend, add 1–2 tbsp milk (dairy or unsweetened almond) to help it move. For a lighter flavor, use a mild sweetener; for a richer profile, try maple syrup or a swirl of nut butter.
