Ingredients

  • 4 cups corn kernels (fresh or frozen)
  • 1/4 cup mayonnaise
  • 2 tablespoons sour cream
  • 1/4 cup crumbled cotija cheese
  • 2 tablespoons chopped fresh cilantro
  • 1 tablespoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon cayenne pepper (optional)
  • Salt to taste


Instructions

  1. If using frozen corn, thaw it according to package directions. If using fresh corn, cut the kernels off the cobs.
  2. In a large bowl, combine the corn kernels, mayonnaise, sour cream, cotija cheese, cilantro, lime juice, chili powder, and cayenne pepper (if using).
  3. Stir everything together until well combined.
