These Chocolate Raspberry Bars are a gooey, rich, and irresistibly fruity treat that comes together with just 7 ingredients. With layers of buttery shortbread, tart raspberry jam, and melty chocolate chips, this easy dessert is perfect for holidays, bake sales, or anytime you’re craving something sweet and chewy.
Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1 large egg
- 3/4 cup seedless raspberry jam
- 1/2 cup chocolate chips (dark or semi-sweet)
- Optional: 1/3 cup chopped cashews or almonds
Instructions
- Preheat and Prep: Preheat oven to 350°F (175°C) and lightly grease or line an 8×8-inch baking pan with parchment paper.
- Make the Base: Cream butter and sugar until fluffy. Beat in egg. Add flour and mix just until combined. Reserve 1 cup of dough for topping.
- Build the Layers: Press remaining dough into the bottom of the pan. Spread jam over the crust, staying 1/2 inch from the edges. Sprinkle half of the chocolate chips on top.
- Add Topping: Crumble the reserved dough over the jam layer. Sprinkle with remaining chocolate chips (and optional nuts).
- Bake: Bake for 45–50 minutes or until golden brown and jam is bubbly. Let cool completely before slicing into bars.
Notes
Store bars in an airtight container at room temperature for up to 5 days or freeze for up to 3 months. For a gluten-free version, use a 1:1 gluten-free flour blend. White chocolate or fresh raspberries make excellent additions for variation.
