Description

Enjoy a cheesy and easy Chicken Quesadilla Casserole for a quick family meal.


Ingredients

  • 1 pound cooked chicken, shredded
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 1 can (10 ounces) diced tomatoes and green chilies, undrained
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12 (6-inch) corn tortillas
  • 2 cups shredded cheddar cheese
  • Optional toppings: sour cream, salsa, guacamole


Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large skillet, sauté onion and bell pepper until softened.
  3. Stir in cooked chicken, diced tomatoes and green chilies, chili powder, cumin, garlic powder, salt, and pepper.
  4. Cut tortillas into quarters.
  5. In a 9×13 inch baking dish, layer 1/3 of the tortillas, 1/2 of the chicken mixture, and 1/3 of the cheese.
  6. Repeat layers, ending with tortillas and cheese.
  7. Bake for 20-25 minutes, or until cheese is melted and bubbly.
  8. Let stand for a few minutes before serving.
  9. Top with sour cream, salsa, or guacamole, if desired.

Notes

  • Use rotisserie chicken for convenience.
  • Adjust the amount of chili powder to your taste.
  • Store leftovers in the refrigerator.
