A simple and satisfying one-pot meal featuring tender chicken, vibrant broccoli, and creamy orzo pasta, all coated in a delicious cheesy sauce.
Ingredients
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup milk
- 1 cup broccoli florets
- 1 cup shredded cheddar cheese
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides.
- Add orzo pasta, chicken broth, and milk to the pot. Bring to a simmer, stirring occasionally.
- Stir in broccoli florets. Cover and cook for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed.
- Remove from heat. Stir in shredded cheddar cheese until melted and creamy.
- Season with salt and pepper to taste. Serve immediately.

- For a richer flavor, you can use heavy cream instead of milk.
