Description

Ingredients

  • 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup milk
  • 1 cup broccoli florets
  • 1 cup shredded cheddar cheese
  • Salt and black pepper to taste


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides.
  2. Add orzo pasta, chicken broth, and milk to the pot. Bring to a simmer, stirring occasionally.
  3. Stir in broccoli florets. Cover and cook for 10-12 minutes, or until orzo is tender and most of the liquid is absorbed.
  4. Remove from heat. Stir in shredded cheddar cheese until melted and creamy.
  5. Season with salt and pepper to taste. Serve immediately.
