Ingredients
- 1 pound shrimp, peeled and deveined
- 1 pound pasta (such as fettuccine or linguine)
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 red bell pepper, chopped
- 2 tablespoons Cajun seasoning
- 1/2 teaspoon red pepper flakes (optional)
- 1 (14.5 ounce) can diced tomatoes, undrained
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
- Salt and pepper to taste
Instructions
- Cook pasta according to package directions. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add onion, garlic, and bell peppers. Cook until softened, about 5-7 minutes.
- Add shrimp, Cajun seasoning, and red pepper flakes (if using) to the skillet. Cook until shrimp is pink and cooked through, about 3-5 minutes.
- Stir in diced tomatoes and heavy cream. Bring to a simmer and cook for 5 minutes, stirring occasionally.
- Stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
- Add cooked pasta to the skillet and toss to coat.
- Garnish with fresh parsley and serve immediately.
