Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 pound pasta (such as fettuccine or linguine)
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • 2 tablespoons Cajun seasoning
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Salt and pepper to taste


Instructions

  1. Cook pasta according to package directions. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add onion, garlic, and bell peppers. Cook until softened, about 5-7 minutes.
  3. Add shrimp, Cajun seasoning, and red pepper flakes (if using) to the skillet. Cook until shrimp is pink and cooked through, about 3-5 minutes.
  4. Stir in diced tomatoes and heavy cream. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  5. Stir in Parmesan cheese until melted and smooth. Season with salt and pepper to taste.
  6. Add cooked pasta to the skillet and toss to coat.
