Ingredients
- 10 ounces fresh spinach
- 1 cup fresh cranberries
- 1/2 cup chopped pecans or walnuts
- 1/4 cup crumbled feta or goat cheese (optional)
- 1/4 cup dried cranberries (optional, for extra sweetness)
- For the Dressing:
- 1/3 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey or maple syrup
- 1 teaspoon Dijon mustard
- Salt and freshly ground black pepper to taste
Instructions
- Wash and thoroughly dry the spinach. Place it in a large salad bowl.
- Add the fresh cranberries, chopped nuts, and cheese (if using) to the bowl with the spinach.
- If using dried cranberries, add them now.
- In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey or maple syrup, and Dijon mustard. Season with salt and pepper.
- Pour the dressing over the salad just before serving.
- Toss gently to coat all ingredients evenly.
Notes
- For a sweeter salad, use dried cranberries in addition to fresh ones.
- Toasted nuts add extra flavor.
