A vibrant and festive salad perfect for holiday gatherings. This Cranberry Spinach Salad combines fresh spinach, tart cranberries, crunchy nuts, and a creamy dressing for a delightful Christmas dish.


Ingredients

  • 10 ounces fresh spinach
  • 1 cup fresh cranberries
  • 1/2 cup chopped pecans or walnuts
  • 1/4 cup crumbled feta or goat cheese (optional)
  • 1/4 cup dried cranberries (optional, for extra sweetness)
  • For the Dressing:
  • 1/3 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and freshly ground black pepper to taste


Instructions

  1. Wash and thoroughly dry the spinach. Place it in a large salad bowl.
  2. Add the fresh cranberries, chopped nuts, and cheese (if using) to the bowl with the spinach.
  3. If using dried cranberries, add them now.
  4. In a small bowl or jar, whisk together the olive oil, balsamic vinegar, honey or maple syrup, and Dijon mustard. Season with salt and pepper.
  5. Pour the dressing over the salad just before serving.
  6. Toss gently to coat all ingredients evenly.

Notes
