Description

This Select BBQ Chicken Sheet Pan Recipe is the ultimate one-pan dinner — juicy BBQ chicken baked to perfection alongside roasted vegetables for a flavor-packed, fuss-free meal. It’s simple, satisfying, and ready in under an hour, perfect for busy weeknights or casual gatherings.

Ingredients

  • 4 bone-in, skin-on chicken thighs (or boneless if preferred)
  • 2 cups baby potatoes, halved
  • 1 red bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • 1/2 cup BBQ sauce (your favorite brand or homemade)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (205°C). Line a large sheet pan with foil or parchment paper for easier cleanup.
  2. Prep Ingredients: In a large bowl, toss the chicken with BBQ sauce, paprika, garlic powder, salt, and pepper. In a separate bowl, toss veggies with olive oil and a pinch of salt.
  3. Assemble on Pan: Arrange the seasoned chicken on one side of the sheet pan. Spread the vegetables on the other side in a single layer.
  4. Roast: Bake for 35–40 minutes, or until the chicken reaches an internal temperature of 165°F and the veggies are tender and golden.
  5. Finish & Serve: For a caramelized glaze, brush the chicken with additional BBQ sauce and broil for 2–3 minutes. Let rest before garnishing with fresh parsley and serving.

Notes

Make sure not to overcrowd the pan — this helps everything roast instead of steam. You can swap in your favorite vegetables like zucchini or broccoli. To save time, marinate the chicken in BBQ sauce up to 24 hours in advance.
