Ingredients

  • 8 oz bow tie or penne pasta
  • 1/2 lb fresh asparagus, trimmed and chopped
  • 8 oz white mushrooms or cremini, sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • Grated parmesan or nutritional yeast (optional)
  • 1/2 cup reserved pasta water


Instructions

  1. Cook the Pasta: Boil pasta in salted water until al dente. Reserve 1/2 cup pasta water, then drain.
  2. Sauté Mushrooms: In a large skillet, heat olive oil and sauté mushrooms over medium heat until golden brown, about 5-6 minutes.
  3. Add Asparagus: Add chopped asparagus and cook for another 4 minutes until tender-crisp.
  4. Build the Sauce: Add butter, garlic, lemon juice, and season with salt and pepper. Stir to coat.
  5. Toss Everything Together: Add drained pasta and reserved pasta water to skillet. Toss to combine and coat the pasta in sauce.
